Johnny Cakes

Originally called Journey cakes because they kept better than yeast bread on ocean voyages, these cakes are quick and easy to make and take the place of dinner rolls or buns.

Johnny cakes are part of every event or celebration on Anguilla. Vendors arrive with a big frying pot and coals to heat the oil. The johnny cakes prepared at home and ready to put in the hot oil. Served hot they go great with ribs and chicken.

1 cup flour
1 1/2 tea baking powder
1/4 tea salt
1 table butter
water
1/4 cup veg oil (for frying)

Flour, baking powder and salt in a bowl.
Rub butter into flour mixture with fingers
Mix enough water for stiff dough.
Knead until smooth
Roll into a ball and allow to sit under bowl for 1/2 hour
Cut into pieces and shape in palm smooth and flat



To bake:
Poke holes in cake with fork
Heat oven hot...375
Place dough cakes on baking pan
Bake for 20 minutes
or until light golden brown

To Fry:
Heat vegetable oil in skillet
Fry cakes until evenly golden brown on all sides.
