"Taste Of Around The World Dinner"


The students of the International Cuisine class at the Anguilla Community College proudly showcased their talent at a dinner under the theme “A Taste of Around the World” on Thursday, December 3.
The class commenced on September 3 under the tutelage of Mrs. Karimah Carty, Chef de Partie/Trainer at the College. The students’ backgrounds varied from cooks to public servants and others interested in the culinary field. They are Larry Brooks, Catherine Carbon, Antoine Carty, Godfrey John, Marva Phillip, Josian Rahael and Erlene White who will be taking their final examination shortly.

During the semester, the class researched and prepared dishes from various types of menus that have impacted international cuisines including Caribbean, Asian, French, Italian, American and Mexican. Students also made beverages to complement the regions studied.

The objectives of the class were to expose students to a variety of international cuisines, familiarise them with the culture and commodities used by different nationalities; create opportunities for students to be innovative in the implementation of international dining experiences’ and enable them to finish and critically assess products taking into account design, colour, flavour and portion control. Certification for this course is offered through the Barbados Community College.

The dinner was attended by a cross-section of the public. Students were responsible for selling tickets for the event as well as preparing and serving the three-course meal. “I have been to various hotels and restaurants, but the food I enjoyed here was better,” Evalie Bradley remarked in appreciation during comments time. The College hopes that more persons in the community will enhance their skills by taking advantage of the learning opportunities being offered in the field of hospitality at the Anguilla Community College.

Mrs. Carty, the Chef, who is the daughter of Jerome and Amorette Bethel of South Hill, was a student at State University New York at Cobleskill where she acquired a Bachelor’s degree in Restaurant Management. She then spent two and a half years in Miami where she obtained a Bachelor’s degree in Hospitality Management and an Associates degree in Hotel Management, graduating Summa Cum Laude. The highly-qualified Anguillian chef has been with the Anguilla Community for one year so far, and expects to continue there to develop culinary and hospitality management courses. “I encourage anyone who is interested in doing hospitality courses or cooking classes to sign up at the Community College.

It will be great and you will definitely have a good time,” she advised. “Young people need to be aware of what we have in Anguilla. We have the offerings here that you can get overseas.”

Director of Hospitality Studies at the College, Sharon Richardson, also joined in inviting persons to sign up for attendance. She said there were various part-time professional courses in the evenings, Mondays to Thursdays, as well as the Zenaida Café and kitchen. Although not fully open, a lot of catering is done there regularly.
