Chef Profile: Dale Carty

The staff at Anguilla Guide thought our first profile should be a true Anguilla success story. Dale Carty is the owner and head chef of Tasty’s Cafe in South Hill, Anguilla. This easy to access, casual restaurant is the kind of place locals consider a regular stop and visitors return to again and again. The service is fast and friendly, the restaurant is decorated in a cool Caribbean style and the food is as the name implies…Tasty!

How long have you been on Anguilla: All my life, I was born right here in South Hill.

Date of birth: September 11, 1970

Marital status: Single

Education: Primary school

Where did you train: Malliouhana Resort and yearly visits to the south of France.

Describe yourself: I am hardworking, fair, loving and ambitious

What is your most indispensable kitchen tool and why: My knives, I believe the knife makes the chef.

Who was your inspiration: My grandmother Nin

What is your favorite food to prepare: I love working with fish, seafood of any kind.

What is your favorite spice and why: I enjoy working with combinations of spices so I would have to say I enjoy working with all spices.

If you were not a chef what would be your dream job: I always thought I would like to go into politics but no more.

What is a “must try” entrée at your restaurant: Coconut crusted parrot fish with a spicy banana rum sauce. The combination is incredible.

What is your favorite part of the job: I like having my hand in the creation of every plate that leaves the kitchen and see how it returns. If a plate returns half full I want to know why.

Do you plan any changes for your menu: Tasty’s changes its menu every September to prepare for the coming season. We are also starting a new item maybe once a week, “Taste of Anguilla Tonight”. A six course feast of Anguilla style delights at a fixed price. It will be all that is on the menu for that particular night.

What advice do you have for culinary students getting started: If you don’t love what you are doing, don’t do it!
